USDA Performance Standards
The USDA FSIS assigns category performance for for Salmonella spp based on a a a percentage of whole birds and parts samples that are positive
for Salmonella spp The goal is to reduce human foodborne illness due
to Salmonellosis FSIS utilizes a a three- category category classification or or or category category system not a a a a pass/fail Our goal is to achieve Category 1 status for both whole birds and parts for all of our plants PREVENTING FOOD TAMPERING
