We’ve swapped out the mayo for non-fat Greek yogurt to up the protein and lower the fat, and added fresh simple fruit to bring a splash of color, crunch and tartness.
Cranberry Walnut Chicken Salad Bites
Ingredients

1 cup cooked chopped boneless skinless chicken breast

1/2 cup Celery

2 tbsp Green Onions, chopped

3 tbsp Dried Cranberries

1 Green Apple, diced

1/4 cup nonfat Greek yogurt, plain

1 tsp Black pepper, Freshly ground

1/2 tsp Salt

3 tbsp Walnuts, toasted

Wonton wrappers
Directions
Pre-heat oven to 350 degrees.
Spray a cupcake pan with nonstick olive oil or avocado oil spray, then place two wonton wrappers in the cup — repeat with all wontons. Bake for 10 minutes until golden brown. Repeat until you have at least 24 cooked wrappers. Set aside to cool.
In a large mixing bowl, combine the chicken, celery, green onions, cranberries, apple, yogurt, walnuts, green onions, salt and pepper.
Scoop chicken salad into wonton cups and serve chilled.
