Fall is officially here, we know you’re likely dreaming of a Thanksgiving feast, and it got us thinking…
Why can’t we bring the flavors of Thanksgiving to the weeknight dinner table?
And thus, this super-simple, Thanksgiving inspired, savory, sweet, chicken entree was born.
Stuffed Chicken Breast
- 4 chicken breasts
- 1 box stove top stuffing mix
- 1 small onion, chopped
- ½ cup celery, chopped
- ½ cup crasins
- 1 small apple, diced
- ¼ cup pecans (or walnuts), chopped
- 1 cup chicken broth
- ¼ cup butter
- 1 tablespoon paprika
- Salt & pepper to taste
- Oil of choice
Preheat oven to 350°F.
Salt and pepper your chicken breast and make an incision lengthwise - the incision will act as a pocket for the stuffing, so be sure not to cut through to the other side. Set aside.
In a medium bowl, mix the remaining ingredients until combined. Stuff your chicken breast with the stuffing mixture, pressing into the chicken to fill the pocket completely.
Heat a cast iron skillet or sauté pan to medium heat and add your oil of choice. Once hot, add chicken breast and let cook until browned, flipping as needed; about 4 mins on each side.
Transfer chicken to the preheated oven and bake until stuffing has crisped and heated through; about 15 min. Check the internal temp of your chicken using a meat thermometer, as larger cuts will take longer to bake in the oven. Temperature should read a minimum of 165°F.
Serve with chicken gravy and mashed potatoes for an easy weeknight meal.
